- 8 slices Bread preferably stale
- 4 Eggs
- 1 cup Milk
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon zest
- 1 cup Blueberries fresh or frozen
- 2 tablespoon Butter for cooking
- 2 tablespoon Maple syrup for serving
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and lemon zest.
Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
Heat a skillet over medium heat and add a bit of butter.
Cook the bread slices in the skillet until golden brown on both sides, about 3-4 minutes per side.
In the last minute of cooking, sprinkle blueberries over the top of the bread slices.
Serve hot with a drizzle of maple syrup.
