  • 1 cup Blueberries fresh or frozen
  • 2 tablespoon Butter for cooking
  • 2 tablespoon Maple syrup for serving

Instructions 

  1. In a mixing bowl, whisk together the eggs, milk, vanilla extract, and lemon zest.
  2. Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
  3. Heat a skillet over medium heat and add a bit of butter.
  4. Cook the bread slices in the skillet until golden brown on both sides, about 3-4 minutes per side.
  5. In the last minute of cooking, sprinkle blueberries over the top of the bread slices.
  6. Serve hot with a drizzle of maple syrup.
