Blueberry Lemon Bars

Crust
- 1 cup all-purpose flour
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 2 cups fresh blueberries
- 1 cup sugar
- 3 eggs
- ½ cup lemon juice
- ¼ cup all-purpose flour
- 1 teaspoon lemon zest
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine 1 cup of flour and ¼ cup of sugar. Stir in the melted butter until well combined. Press the mixture into the bottom of the prepared pan.
Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and set aside.
In another bowl, whisk together 1 cup of sugar, eggs, lemon juice, ¼ cup of flour, and lemon zest until smooth. Gently fold in the blueberries.
Pour the blueberry mixture over the baked crust. Return to the oven and bake for an additional 25 minutes, or until the filling is set.
Allow the bars to cool completely in the pan before cutting into squares. Enjoy!
