Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 1 cup fresh blackberries
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
  3. Add the cold butter cubes and cut them into the dry ingredients until the mixture resembles coarse crumbs.
  4. Gently fold in the blackberries.
  5. In a small bowl, whisk together the heavy cream and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick. Cut into 8 wedges and place them on the prepared baking sheet.
  7. Bake for 18-20 minutes, or until the scones are golden brown. Let cool slightly before serving.
