Main Ingredients
- 1 can black beans drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 8 small tortillas
- to taste salt and pepper
Toppings
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- ½ cup sour cream
- ½ cup shredded cheese
- ¼ cup cilantro chopped
Heat the olive oil in a skillet over medium heat.
Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
Add the black beans and cook until heated through, about 5 minutes. Season with salt and pepper to taste.
Warm the tortillas in a dry skillet or microwave.
Assemble the tacos by placing a portion of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, sour cream, shredded cheese, and chopped cilantro.
