Ingredients 

Main Ingredients

  • 1 can black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 8 small tortillas
  • to taste salt and pepper

Toppings

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup sour cream
  • ½ cup shredded cheese
  • ¼ cup cilantro chopped

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. Add the black beans and cook until heated through, about 5 minutes. Season with salt and pepper to taste.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Assemble the tacos by placing a portion of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, sour cream, shredded cheese, and chopped cilantro.
