Ingredients

  • 4 bell peppers any color
  • 1 can black beans drained and rinsed
  • 1 cup cooked rice
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine black beans, cooked rice, corn, shredded cheese, cumin, chili powder, salt, and pepper.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. Bake in the preheated oven for 30 minutes, or until the peppers are tender.
