- 4 bell peppers any color
- 1 can black beans drained and rinsed
- 1 cup cooked rice
- 1 cup corn kernels fresh or frozen
- 1 cup shredded cheese cheddar or Mexican blend
- 1 teaspoon cumin
- 1 teaspoon chili powder
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a mixing bowl, combine black beans, cooked rice, corn, shredded cheese, cumin, chili powder, salt, and pepper.
Stuff the bell peppers with the mixture and place them in a baking dish.
Bake in the preheated oven for 30 minutes, or until the peppers are tender.
