Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 2 cans Black Beans, drained and rinsed
- 4 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 Salt to taste
- 1 Pepper to taste
- 1 Lime wedges for serving
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add black beans, vegetable broth, cumin, and chili powder. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Use a blender to puree the soup until smooth. Return to pot and heat through.
Season with salt and pepper to taste. Serve with lime wedges.
