Ingredients 

Main Ingredients

  • 2 cups Black beans rinsed and drained
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Cherry tomatoes halved
  • 1 medium Red bell pepper diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
