Ingredients 

Main Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup quinoa cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cheese shredded, optional

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, salsa, cumin, and chili powder.
  3. Stuff the bell peppers with the quinoa mixture.
  4. Place stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30 minutes. If using cheese, uncover and sprinkle cheese on top, then bake for an additional 5 minutes until cheese is melted.
