Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 clove Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 loaf Baguette sliced
  • 1 cup Cherry Tomatoes halved
  • 1 tablespoon Cilantro chopped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place baguette slices on a baking sheet and toast in the oven for 5-7 minutes, until golden brown.
  3. In a mixing bowl, combine black beans, garlic, olive oil, cumin, and salt. Mash until well mixed.
  4. Spread the black bean mixture onto the toasted baguette slices.
  5. Top with cherry tomatoes and chopped cilantro.
  6. Serve immediately.
