Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 can Black beans, drained and rinsed
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 cup Corn kernels
- 4 Tortillas
- 1 cup Shredded cheese
- 1 cup Salsa
Heat the olive oil in a skillet over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for another minute.
Add the black beans, cumin, and chili powder. Cook for 5-7 minutes, stirring occasionally.
Stir in the corn kernels and cook for another 2-3 minutes.
Warm the tortillas in a separate pan or microwave.
Spoon the black bean mixture onto each tortilla, top with shredded cheese and salsa, then roll up the burritos.
