Ingredients 

Main Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 8 pieces tortillas
  • 2 cups enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine sweet potatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  3. Place a portion of the mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  5. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  6. Serve hot and enjoy!
