Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 8 pieces Taco Shells
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheese

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the black beans and corn to the skillet. Cook for 5-7 minutes, stirring occasionally.
  3. Stir in the cumin, chili powder, and salt. Cook for another 2 minutes.
  4. Warm the taco shells according to package instructions.
  5. Fill each taco shell with the black bean and corn mixture. Top with shredded lettuce, diced tomatoes, and shredded cheese.
