Ingredients 

Main Ingredients

  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • 1 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Place one tortilla in the skillet and sprinkle with ¼ cup of cheese.
  3. 3. Add ¼ cup of black beans and ¼ cup of corn on top of the cheese.
  4. 4. Top with another ¼ cup of cheese and place another tortilla on top.
  5. 5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
  6. 6. Repeat with the remaining ingredients to make 4 quesadillas.
  7. 7. Cut into wedges and serve warm.
