Black Bean and Avocado Burritos

Main Ingredients
- 1 can Black Beans drained and rinsed
- 2 Avocados peeled, pitted, and diced
- 1 cup Cherry Tomatoes halved
- 1 cup Corn Kernels fresh or frozen
- 1 Red Onion small, finely chopped
- 1 Lime juiced
- ¼ cup Cilantro chopped
- 4 Tortillas large
- to taste Salt and Pepper
1. In a mixing bowl, combine black beans, avocados, cherry tomatoes, corn, red onion, lime juice, and cilantro. Season with salt and pepper to taste.
2. Heat a skillet over medium heat. Warm tortillas one at a time until soft and pliable.
3. Spoon the black bean mixture onto each tortilla. Fold in the sides and roll up to form burritos.
4. Serve immediately and enjoy!
