Ingredients 

Main Ingredients

  • 1 can Black Beans drained and rinsed
  • 2 Avocados peeled, pitted, and diced
  • 1 cup Cherry Tomatoes halved
  • 1 cup Corn Kernels fresh or frozen
  • 1 Red Onion small, finely chopped
  • 1 Lime juiced
  • ¼ cup Cilantro chopped
  • 4 Tortillas large
  • to taste Salt and Pepper

Instructions 

  1. 1. In a mixing bowl, combine black beans, avocados, cherry tomatoes, corn, red onion, lime juice, and cilantro. Season with salt and pepper to taste.
  2. 2. Heat a skillet over medium heat. Warm tortillas one at a time until soft and pliable.
  3. 3. Spoon the black bean mixture onto each tortilla. Fold in the sides and roll up to form burritos.
  4. 4. Serve immediately and enjoy!
