Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 cup Corn Kernels
- 2 cans Diced Tomatoes
- 2 cans Black Beans, drained and rinsed
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 cups Vegetable Broth
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Stir in minced garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes.
Add corn, diced tomatoes, black beans, chili powder, cumin, paprika, salt, and black pepper. Stir well.
Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for 30 minutes, stirring occasionally.
