Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 cup Corn Kernels
  • 2 cans Diced Tomatoes
  • 2 cans Black Beans, drained and rinsed
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cups Vegetable Broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in minced garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes.
  4. Add corn, diced tomatoes, black beans, chili powder, cumin, paprika, salt, and black pepper. Stir well.
  5. Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for 30 minutes, stirring occasionally.
  6. Serve hot and enjoy!
