Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can crushed tomatoes (28 oz)
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 4 eggs
  • ¼ cup fresh parsley, chopped for garnish

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and red bell pepper. Cook until softened, about 5 minutes.
  3. Add minced garlic, ground cumin, paprika, and ground coriander. Cook for another minute.
  4. Pour in the crushed tomatoes. Season with salt and black pepper. Simmer for 10 minutes.
  5. Make small wells in the sauce and crack the eggs into each well. Cover and cook until the eggs are set, about 5 minutes.
  6. Garnish with fresh parsley and serve hot.
