Ingredients 

Main Ingredients

  • 1 cup Quinoa cooked
  • 1 cup Chickpeas drained and rinsed
  • 1 cup Sweet potato diced
  • 1 cup Spinach fresh
  • 1 cup Red cabbage shredded
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Cook quinoa according to package instructions.
  4. In a bowl, combine cooked quinoa, chickpeas, roasted sweet potatoes, spinach, and red cabbage.
  5. Drizzle with your favorite dressing and serve.
