Main Ingredients
- 1 cup Quinoa cooked
- 1 cup Chickpeas drained and rinsed
- 1 cup Sweet potato diced
- 1 cup Spinach fresh
- 1 cup Red cabbage shredded
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
Cook quinoa according to package instructions.
In a bowl, combine cooked quinoa, chickpeas, roasted sweet potatoes, spinach, and red cabbage.
Drizzle with your favorite dressing and serve.
