Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • ¼ cup fresh mint chopped

Dressing

  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 tablespoon honey
  • 1 pinch salt

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  4. 4. In a mixing bowl, combine quinoa, strawberries, blueberries, raspberries, and mint.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, honey, and salt.
  6. 6. Pour dressing over the salad and toss gently to combine.
  7. 7. Serve immediately or chill in the fridge for later.
