  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup mixed berries fresh or frozen
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine the cooked quinoa, mixed berries, honey, and vanilla extract. Stir gently to combine.
  5. 5. Serve warm or chilled.
