- 6 Eggs
- 1 cup Bell Peppers, diced
- ½ cup Goat Cheese, crumbled
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the eggs with salt and black pepper.
Heat olive oil in a skillet over medium heat. Add diced bell peppers and cook until soft.
Pour the egg mixture into the skillet and cook for a few minutes until the edges start to set.
Sprinkle crumbled goat cheese over the top.
Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set.
Remove from the oven, let it cool slightly, then slice and serve.
