  • 6 Eggs
  • 1 cup Bell Peppers, diced
  • ½ cup Goat Cheese, crumbled
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs with salt and black pepper.
  3. Heat olive oil in a skillet over medium heat. Add diced bell peppers and cook until soft.
  4. Pour the egg mixture into the skillet and cook for a few minutes until the edges start to set.
  5. Sprinkle crumbled goat cheese over the top.
  6. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set.
  7. Remove from the oven, let it cool slightly, then slice and serve.
