  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add sliced bell pepper and onion, and cook until softened.
  3. In a bowl, whisk the eggs with salt and black pepper.
  4. Pour the egg mixture over the cooked vegetables in the skillet. Cook on the stovetop for a few minutes until the edges start to set.
  5. Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the frittata is fully set and slightly golden on top.
  6. Remove from the oven, let it cool slightly, then slice and serve.
