- 6 eggs
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add sliced bell pepper and onion, and cook until softened.
In a bowl, whisk the eggs with salt and black pepper.
Pour the egg mixture over the cooked vegetables in the skillet. Cook on the stovetop for a few minutes until the edges start to set.
Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the frittata is fully set and slightly golden on top.
Remove from the oven, let it cool slightly, then slice and serve.
