Ingredients

  • 1 medium beetroot, cooked and peeled
  • 1 can chickpeas, drained and rinsed 15 oz
  • 2 tablespoon tahini
  • 2 tablespoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions 

  1. Blend beetroot, chickpeas, tahini, lemon juice, and garlic in a food processor.
  2. Slowly add olive oil while blending until smooth.
  3. Season with salt and pepper to taste.
  4. Serve chilled or at room temperature.
