Main Ingredients
- 4 whole Beets medium-sized, scrubbed clean
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper freshly ground
1. Preheat your oven to 400°F (200°C).
2. Wrap each beet in aluminum foil and place them on a baking sheet.
3. Roast the beets in the preheated oven for about 45 minutes or until they are tender when pierced with a fork.
4. Let the beets cool, then peel off the skins and cut them into slices or cubes.
5. Toss the beet slices with olive oil, salt, and black pepper.
6. Serve immediately or store in the refrigerator for up to 3 days.
