- 2 large beets cooked and sliced
- 2 oranges peeled and segmented
- 1 cup arugula
- ¼ cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar

1. In a mixing bowl, combine the sliced beets and orange segments.
2. Add the arugula and crumbled feta cheese.
3. Drizzle with olive oil and balsamic vinegar.
4. Season with salt and pepper to taste.
5. Toss gently to combine and serve immediately.
