  • 2 large beets
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • to taste Fresh parsley for garnish

Instructions 

  1. Peel and spiralize the beets.
  2. Heat olive oil in a pan over medium heat.
  3. Add garlic and sauté for 1 minute.
  4. Add beet noodles, salt, and pepper. Cook for 3-5 minutes.
  5. Remove from heat and toss with lemon juice.
  6. Garnish with fresh parsley and serve.
