Ingredients

  • 2 medium beets roasted and peeled
  • 4 oz goat cheese
  • 1 clove garlic minced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Wrap the beets in aluminum foil and roast in the oven for about 30 minutes, or until tender.
  3. 3. Let the beets cool, then peel and chop them into chunks.
  4. 4. In a blender, combine the roasted beets, goat cheese, garlic, olive oil, lemon juice, salt, and black pepper. Blend until smooth.
  5. 5. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
