  • 4 slices Baguette sliced
  • 2 medium Beets roasted and sliced
  • 2 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 2 oz Goat Cheese softened
  • 1 tablespoon Fresh Herbs chopped (optional)

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place baguette slices on a baking sheet and brush with olive oil.
  3. Toast in the oven for about 10 minutes or until golden brown.
  4. In a mixing bowl, combine roasted beets, minced garlic, and a drizzle of olive oil.
  5. Spread softened goat cheese on each toasted baguette slice.
  6. Top with beet mixture and garnish with fresh herbs if desired.
