Ingredients 

Main Ingredients

  • 2 medium beets peeled and sliced
  • 4 oz goat cheese
  • 4 small slider buns
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss beet slices with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast beets for 25-30 minutes until tender.
  4. Spread goat cheese on the bottom half of each slider bun.
  5. Top with roasted beet slices and the top half of the bun.
