Beet and Goat Cheese Sliders

Main Ingredients
- 2 medium beets peeled and sliced
- 4 oz goat cheese
- 4 small slider buns
- 1 tablespoon olive oil
- to taste salt and pepper
Preheat oven to 400°F (200°C).
Toss beet slices with olive oil, salt, and pepper. Spread on a baking sheet.
Roast beets for 25-30 minutes until tender.
Spread goat cheese on the bottom half of each slider bun.
Top with roasted beet slices and the top half of the bun.
