Main Ingredients
- 2 lbs Beef Chuck cut into cubes
- 4 cups Beef Broth
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 1 cup Onion chopped
- 3 cloves Garlic minced
- 2 tablespoon Tomato Paste
- 1 teaspoon Thyme dried
- 1 teaspoon Rosemary dried
- 2 tablespoon Olive Oil
- to taste Salt
- to taste Black Pepper
1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
2. Add onions and garlic, cook until softened.
3. Stir in tomato paste, thyme, and rosemary.
4. Pour in beef broth, bring to a boil, then reduce heat and simmer for 1 hour.
5. Add carrots and potatoes, cook for another 30 minutes or until tender.
6. Season with salt and pepper to taste. Serve hot.
