- 1 lb Ground Beef
- 1 can Enchilada Sauce (10 oz)
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 12 pieces Corn Tortillas
- 1 can Black Beans (15 oz, drained and rinsed)
- 1 cup Sour Cream
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
Add the ground beef to the skillet and cook until browned. Drain any excess fat.
Stir in the cumin, chili powder, salt, and black beans. Cook for another 2-3 minutes.
In a baking dish, spread a thin layer of enchilada sauce on the bottom. Place a layer of corn tortillas over the sauce.
Spread a layer of the beef mixture over the tortillas, followed by a layer of shredded cheese. Repeat the layers, ending with a layer of cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving. Top with sour cream if desired.
