Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast cut into chunks
  • 2 cups Beef broth
  • 5 Guajillo chiles stemmed and seeded
  • 3 Ancho chiles stemmed and seeded
  • 1 White onion quartered
  • 4 cloves Garlic peeled
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 2 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 2 tablespoon Apple cider vinegar
  • 2 tablespoon Vegetable oil

Instructions 

  1. 1. Toast the guajillo and ancho chiles in a dry skillet over medium heat until fragrant, about 2 minutes. Remove from heat and soak in hot water for 20 minutes.
  2. 2. In a blender, combine the soaked chiles, onion, garlic, oregano, cumin, salt, pepper, and vinegar. Blend until smooth.
  3. 3. Heat the oil in a large pot over medium-high heat. Add the beef and sear on all sides until browned.
  4. 4. Pour the chile sauce over the beef and add the beef broth. Bring to a boil, then reduce heat to low and simmer for 3 hours, or until the beef is tender.
  5. 5. Remove the beef from the pot and shred with two forks. Strain the sauce to remove any solids.
  6. 6. Serve the shredded beef with the sauce, warm tortillas, and your favorite toppings.
