Main Ingredients
- 1 lb beef stew meat cut into bite-sized pieces
- 1 cup barley
- 1 onion chopped
- 3 carrots sliced
- 2 celery stalks sliced
- 2 cloves garlic minced
- 8 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
1. In a large pot, brown the beef over medium heat.
2. Add the onion, carrots, celery, and garlic. Cook until vegetables are tender.
3. Stir in the beef broth, barley, thyme, and rosemary. Bring to a boil.
4. Reduce heat, cover, and simmer for 1 hour and 30 minutes, or until barley is tender.
5. Season with salt and pepper to taste before serving.
