Ingredients

  • 1 head Cauliflower cut into florets
  • ½ cup BBQ Sauce
  • 8 small Tortillas
  • 1 cup Red Cabbage shredded
  • ¼ cup Cilantro chopped
  • 1 unit Lime cut into wedges

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with BBQ sauce in a mixing bowl.
  3. Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly charred.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble tacos by placing roasted cauliflower on tortillas, then top with shredded cabbage, chopped cilantro, and a squeeze of lime.
