Barley Salad Recipe
A refreshing and healthy barley salad perfect for any meal.

Main Ingredients
- 1 cup Pearl Barley
- 2 cups Water
- 1 Cucumber, diced
- 1 Red Bell Pepper, diced
- ¼ cup Red Onion, finely chopped
- ¼ cup Fresh Parsley, chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Rinse the barley under cold water.
2. In a pot, bring water to a boil. Add barley and reduce heat to a simmer. Cook for 30 minutes or until tender.
3. Drain and let the barley cool.
4. In a mixing bowl, combine the cooled barley, cucumber, red bell pepper, red onion, and parsley.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
6. Pour the dressing over the salad and toss to combine.
7. Serve chilled or at room temperature.
