Ingredients 

Main Ingredients

  • 1 cup Pearl Barley
  • 2 cups Water
  • 1 Cucumber, diced
  • 1 Red Bell Pepper, diced
  • ¼ cup Red Onion, finely chopped
  • ¼ cup Fresh Parsley, chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Rinse the barley under cold water.
  2. 2. In a pot, bring water to a boil. Add barley and reduce heat to a simmer. Cook for 30 minutes or until tender.
  3. 3. Drain and let the barley cool.
  4. 4. In a mixing bowl, combine the cooled barley, cucumber, red bell pepper, red onion, and parsley.
  5. 5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve chilled or at room temperature.
