Ingredients 

Main Ingredients

  • 1 cup barley rinsed
  • 1 can chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Cook barley according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine cooked barley, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  3. 3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.
  4. 4. Pour dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
