Ingredients

  • 1 cup mashed ripe bananas
  • 1 cup rolled oats
  • ½ cup chopped nuts (walnuts or pecans)
  • ½ cup chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, rolled oats, chopped nuts, chocolate chips (if using), vanilla extract, ground cinnamon, and salt. Mix well.
  3. Drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly with the back of the spoon.
  4. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.
  5. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
