  • 3 ripe bananas mashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sugar
  • 1 egg beaten
  • cup melted butter

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
  2. In a large bowl, mix the mashed bananas, sugar, egg, and melted butter.
  3. Combine the flour, baking soda, and salt in a separate bowl. Add to the banana mixture and stir until just combined.
  4. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
