Ingredients

  • 2 large zucchinis cut into sticks
  • 1 cup breadcrumbs preferably panko
  • ½ cup grated Parmesan cheese
  • 2 large eggs beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  3. Dip zucchini sticks into beaten eggs, then coat with breadcrumb mixture.
  4. Place coated zucchini sticks on the prepared baking sheet. Season with salt and pepper.
  5. Bake for 20-25 minutes, until golden and crispy. Serve immediately.
