- 2 large zucchinis sliced thin
- 2 tablespoon olive oil
- ½ cup bread crumbs
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine bread crumbs, Parmesan cheese, garlic powder, salt, and black pepper.
Dip zucchini slices in olive oil, then coat with the bread crumb mixture.
Place the coated zucchini slices on the prepared baking sheet.
Bake for 25-30 minutes, or until golden brown and crispy.
