Baked Potato Skins Recipe

Main Ingredients
- 4 large russet potatoes
- 2 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 0.5 cup sour cream
- 2 tablespoon chopped green onions
Preheat oven to 400°F (200°C).
Scrub potatoes clean and pierce them with a fork. Bake for 45 minutes or until tender.
Let potatoes cool slightly, then cut in half lengthwise. Scoop out the flesh, leaving about ¼ inch of potato on the skin.
Brush both sides of the potato skins with olive oil and place them on a baking sheet. Bake for 10 minutes on each side until crispy.
Fill each potato skin with shredded cheese and crumbled bacon. Return to the oven and bake until the cheese is melted, about 5 minutes.
Top with sour cream and chopped green onions. Serve immediately.
