Azuki Bean Dorayaki Recipe

Ingredients 

Pancake Batter

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 2 units Eggs
  • ½ cup Sugar
  • 1 cup Milk
  • 1 tablespoon Honey

Filling

  • 1 cup Sweetened azuki bean paste

Instructions 

  1. In a mixing bowl, whisk together the eggs and sugar until pale and frothy.
  2. Add the milk and honey, and mix well.
  3. Sift in the flour and baking powder, and mix until smooth.
  4. Heat a non-stick pan over medium heat. Pour a small ladleful of batter onto the pan to form a small pancake.
  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat with remaining batter.
  6. Spread a generous amount of azuki bean paste on one pancake, then top with another pancake to form a sandwich.
