Avocado Veggie Sandwich
A simple and delicious avocado veggie sandwich.

Main Ingredients
- 1 Avocado ripe
- 4 slices Whole grain bread
- 1 Tomato sliced
- ¼ cup Cucumber sliced
- ¼ cup Red onion thinly sliced
- 1 handful Lettuce
- 1 tablespoon Olive oil
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. Toast the bread slices until golden brown.
2. Mash the avocado in a bowl and season with salt and pepper.
3. Spread the mashed avocado on two slices of toasted bread.
4. Layer the tomato, cucumber, red onion, and lettuce on top of the avocado.
5. Drizzle with olive oil and top with the remaining slices of bread.
6. Cut the sandwiches in half and serve immediately.
