Avocado Summer Rolls Recipe

Main Ingredients
- 8 pieces rice paper wrappers
- 2 pieces ripe avocados, sliced
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup cooked vermicelli noodles
- 0.25 cup hoisin sauce (for dipping)
Soak rice paper wrappers in warm water until pliable.
Lay a wrapper on a flat surface and place a few slices of avocado in the center.
Add a small amount of carrots, cucumber, mint, cilantro, and vermicelli noodles.
Fold the sides of the wrapper over the filling and roll tightly.
Repeat with remaining wrappers and ingredients.
Serve with hoisin sauce for dipping.
