Ingredients

  • 4 pcs Potatoes medium-sized, peeled and cubed
  • 2 pcs Avocados ripe, diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 2 tablespoon Lime Juice freshly squeezed
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, avocado, red onion, and cilantro.
  3. 3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. 4. Pour the dressing over the potato mixture and gently toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for an hour before serving.
