Ingredients

  • 4 medium zucchini spiralized
  • 2 cups fresh basil leaves
  • 1 cup avocado mashed
  • ½ cup pine nuts toasted
  • 2 cloves garlic minced
  • ¼ cup olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchini into noodles using a spiralizer.
  2. 2. In a blender, combine basil, avocado, pine nuts, garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  3. 3. Heat a large pan over medium heat. Add the zucchini noodles and cook for 2-3 minutes, until slightly tender.
  4. 4. Remove the pan from heat and toss the noodles with the avocado pesto until well coated.
  5. 5. Serve immediately, garnished with extra pine nuts and basil if desired.
