- 2 Avocados ripe, sliced
- 1 Mango ripe, sliced
- 4 Rice Paper Sheets
- 1 cup Mixed Greens optional
1. Slice the avocados and mango into thin strips.
2. Soak the rice paper sheets in warm water until soft.
3. Place a few slices of avocado, mango, and some mixed greens (if using) on each rice paper sheet.
4. Roll up the rice paper tightly, folding in the sides as you go.
5. Serve immediately with your favorite dipping sauce.
