- 2 avocados ripe
- 2 cups vegetable broth
- 1 lime juiced
- 1 clove garlic minced
- ¼ cup cilantro chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cut the avocados in half, remove the pit, and scoop the flesh into a blender.
Add the vegetable broth, lime juice, minced garlic, chopped cilantro, salt, and black pepper to the blender.
Blend until smooth and creamy.
Chill in the refrigerator for at least 30 minutes before serving.
Serve cold, garnished with extra cilantro if desired.
