Crust
- 1.5 cups Graham cracker crumbs
- 0.5 cup Melted butter
Filling
- 2 cups Cream cheese softened
- 1 cup Sugar
- 2 units Avocados ripe, peeled, and pitted
- 0.5 cup Lime juice freshly squeezed
- 1 tablespoon Lime zest
- 3 units Eggs
Preheat oven to 325°F (165°C).
Mix graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of a springform pan to form the crust.
In a large bowl, beat cream cheese and sugar until smooth. Add avocados, lime juice, and lime zest, and mix until well combined.
Add eggs one at a time, beating well after each addition.
Pour filling over the crust in the springform pan.
Bake for 60 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours before serving.
