Main Ingredients
- 2 cups Corn kernels (fresh or frozen)
- 2 Avocados, diced
- 1 Red bell pepper, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Cilantro, chopped
- 2 tablespoon Lime juice
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
In a large mixing bowl, combine the corn, avocados, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for up to 2 hours before serving.
