Avocado Chickpea Salad Sandwich

Main Ingredients
- 1 can Chickpeas drained and rinsed
- 1 Avocado ripe
- 2 tablespoon Lemon juice
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 8 slices Whole grain bread toasted
1. In a bowl, mash the chickpeas with a fork.
2. Add the avocado and mash until well combined.
3. Stir in the lemon juice, red onion, cilantro, salt, and black pepper.
4. Spread the mixture onto toasted bread slices.
5. Top with another slice of bread to make a sandwich.
